Simple 4-ingredient Cucumber Salad
I used to love this cucumber salad because it was delicious.
I still make it because it tastes good, but I also love it now because it reminds me of my dad.
It reminds me of some of the best times. My mom and dad taught me how to garden when I was young. We always grew cucumbers and zucchini, and I remember plucking them out of the garden. We often made this cucumber salad just minutes after coming in from harvesting.
One of the best things about family recipes is that, even if you’ve lost a part of your family, they stir up cherished memories. It’s almost like spending time and sitting down to a meal with those you’ve lost. Just the taste of this salad takes me back to when I was a young girl and all of the happy times we had as a family.
One of the last things my dad and I did together before he died was to work in my garden together at planting time. I’ll always love working in the garden and enjoying the spoils of one.
It may not do the same for you, but at least you can love this cucumber salad because it’s delicious! It’s also a great, quick and easy way to use up cucumbers from the garden. With just 4 common ingredients, it’s one of those simple recipes that you can make with your eyes closed and one hand tied behind your back.
An added bonus is that my 4 year old son has taken a real liking to this cucumber salad. Just the other evening, my husband and I caught him with the refrigerator doors open after he had gotten the entire serving bowl of cucumber salad out and was eating straight from it at the dinner table. Cooper seriously polished off what would have been 2 adult servings all by himself. And any time I can get him to eat something green, it’s a win!
Here’s the recipe for Simple 4-ingredient Cucumber Salad
- 4 cucumbers, seeded and sliced
- 1 cup mayonnaise
- 1/2 cup raw apple cider vinegar
- 1/2 tsp each sea salt and freshly ground black pepper
Whisk together the mayonnaise, apple cider vinegar, salt and pepper in a bowl. (I do this first so that I don’t have to get a separate bowl dirty making the dressing!)
Peel the cucumbers. If desired, cut in half lengthwise and scoop out the seeds with a spoon. Slice the cucumbers about 1/8″ to 1/4″ thick.
Add cucumbers to the bowl with the dressing, and stir to combine. Serve immediately or refrigerate.
Note: Holds up well for 1-2 days in the refrigerator, although the cucumbers do start to release their water overnight in the dressing mixture. A stir before serving is helpful, and if you intend to keep it overnight, slightly increasing the amount of mayonnaise helps to keep the dressing creamy.
