    I just purchased a Ninja 4-in-1 Cooking System because my old Rival Crockpot had a recall on it. So I figured I’d upgrade myself to a “Cadillac” Crockpot! 😉 I’m cooking for my 90-year-old Dad who has had 2 heart attacks, a minor stroke, & is an insulin dependent diabetic. So I’m interested in finding low carb versions of recipes I can do in my Ninja for the original “meat and potatoes” man! My Dear Old Dad isn’t much on trying new foods or anything exotic, and I’m not much on taking a long time to get a meal on and creating a mass of dirty dishes that I later have to hand wash because we have no dishwasher. I’ve just snagged your recipe for Whoe Wheat Spaghetti with Meat Sauce and will try that tomorrow. Looking forward to finding other recipes. Obviously, I just read your article above. Do you have any personal experience with making half recipes in the Ninja? It’s just me and my Dad so I don’t need to make more than enough for one meal & leftovers the next day.

    • Thanks for stopping by, Karen! I’m glad you’ve found some good info so far. I haven’t done a whole lot of adjusting recipes down for fewer servings. My hunch is that decreasing any amounts of liquid would have a pretty significant impact on any recipe. I have noticed when I’m developing recipes that the cooking liquid seems to steam off more quickly the lower the level gets. So it may be tricky to downsize a pasta dish, for example. Low carb recipes for the Ninja is a request I’ve heard more than once, so I’ll keep my gears turning on recipe ideas! Have you tried any of the Modern Table pastas? They’re made with ingredients like lentils, so they’re naturally lower carb. I’ve been tossing around some ideas for those pastas, because they are some of the best alternative pastas I’ve come across so far!
