Asian Inspired Chicken Salad
I’m so excited that we’re mere weeks away from lettuce gardening season. I’ve grown the best-tasting green leaf, red leaf, and mixed spring green lettuces in my garden the last few years. There’s nothing else like it. If you think homegrown tomatoes are good, garden grown lettuces really put the store bought varieties to shame! I’ve developed many salad recipes to use up my fresh spring lettuce. This Asian Inspired Chicken Salad is one of the best.
Salads make a quick and easy dinner for busy weeknights, and are particularly great if you’re following a low carb meal plan. I always feel like a million bucks after a healthy salad. If you’re still going strong with those New Year’s Resolutions, this salad is sure to help you keep that momentum going. So tasty.
Even though I typically make my own salad dressings, I have found a really great fresh miso ginger dressing in the refrigerated section at my local Whole Foods Market. I’ve picked up a bottle of that in a pinch. And maybe miso isn’t an ingredient you typically keep on hand (although it keeps well in the fridge if you want to try something new). My salad shaker works overtime, and when I make this salad, it’s likely that I’m mixing up this fresh salad dressing recipe.
With as many salads as I make, my salad spinner has become indispensable. I’ve actually been through about 4 of them since they get used so frequently. If you’ve decided to try growing your own lettuce this spring (good for you!), you’ll definitely want to have a good spinner. It will come in handy for washing away the traces of garden that tend to come in on the outer leaves. (It’s not that bad, really. The taste is so worth it.)
This Asian Inspired Chicken Salad is so good that I almost always serve it only as a full dinner salad. Many of my salad recipes are meant to stand in as a side item or the vegetable portion of our dinner. But a few bites of this yummy salad is never enough. You’ll see what I mean when you make it.
