Thank goodness for the Ninja Cooking System in July. The heat and humidity is enough here in Indiana—forget turning on the oven when summer is blazing away like this. This recipe for Dijon Chicken with Rice & Broccoli is perfect for summer and an adaptation of one of my favorites for the Ninja.
You’ll find a lot of Paula Deen cookbooks in my collection. Back in our dating days, Rob and I occasionally landed on her Food Network shows. He would just, like, drool. And that was my cue. The funny thing—I have been most drawn to the recipes in her cookbooks developed by her sons. (Usually you can spot her sons’ recipes by the conspicuous absence of butter!)
[I’m not a butter-hater. In fact, I’ll always pick real butter over the foodlike substance called “spread.” But you’ll also never make jokes about my recipes calling for 2 sticks of butter as the first ingredient. 😂 Paula gets a bad rap for that, but I still love her cooking.]
So the recipe that inspired Dijon Chicken with Rice & Broccoli for the Ninja Cooking System is Bobby’s Baked Chicken with Dijon and Lime. It’s found in The Deen Family Cookbook. I landed on this recipe a lot because of its simplicity and everyone raves about the flavor. Seriously, it’s like chicken and 5 seasoning ingredients, most of which I always keep on hand. So yum.
When you make this recipe in the Ninja Cooking System, the bottom of the rice develops a nice little crust for some texture. And of course it picks up a load of flavor from the chicken and seasoning. I hope you love it as much as I do!
Turn the dial on the Ninja Cooking System to STOVETOP HIGH. Preheat 3 minutes. In the meantime, mix together the mayonnaise, dijon mustard, white wine vinegar, and half each of the shallots and garlic.
Melt the butter in the cooker. Season the chicken breasts with salt and freshly ground black pepper. Add the chicken breasts to the cooker and brown on each side for 3 minutes. Remove the chicken breasts to a plate with silicone-tipped tongs.
Add the rice to the cooker and saute a minute. Pour in the chicken stock, the reserved shallots and garlic, and the dried rosemary. Add sea salt and freshly ground black pepper to taste. Stir and insert the baking rack.
Turn the dial on the Ninja Cooking System to OVEN at 350℉. Place the chicken breasts on one side of the baking rack and spoon half of the mayonnaise mixture over each breast. Place the lid on the cooker and cook for 10 minutes.
Open the cooker and add the broccoli florets to the other side of the baking rack. Season with salt and freshly ground black pepper to taste. Replace the lid and cook another 10 minutes until the rice is tender, broccoli is steamed and chicken is cooked through. Enjoy!
